Simple squash cheese spirals bring a fresh, new twist to favorites from the garden.
4 summer squash, sliced lengthwise 1/8 inch thick
5 ounces herbed cheese spread
Chopped fresh herb, for garnish
1.Thinly slice squash lengthwise; brush lightly with olive oil, salt and black pepper to taste.
2. Grill over high heat until well marked on both sides, 3 to 4 minutes.
3. Spread each with herbed cheese.
4. Roll up, secure with toothpick and top with fresh herb.
