This recipe for Chocolate Strawberry Lava Cake are sure to impress your guests. The gooey truffle-like chocolate on the inside oozed into every pore in our bodies. It was like sin on a plate. Guaranteed to satisfy.
- 1 c. butter
- 8 oz. semi-sweet chocolate chips
- 5 eggs
- ½ c. sugar
- Pinch of salt
- 4 tsp. flour
- 8 muffin cups
- 2 Tbs. low sugar strawberry jam
Melt butter and chocolate in a medium bowl over a saucepan of simmering water. Remove from heat. Beat eggs, sugar and salt in a bowl until dissolved. Beat egg mixture into chocolate until smooth. Beat in flour. Refrigerate batter for 3-5 hours.
Preheat oven to 450˚. In a muffin pan, spray liners and divide batter into cups. Bake until batter puffs and the center is not yet set, about 10-15 minutes. Carefully lift cakes from pan and set on a solid surface. Pull papers away from cakes and transfer to plates. Top with low sugar jam (we used Smuckers®). Note: It’s not sugar-free, it’s low sugar.
