Apple Raisin & Nut Cupcakes

Ingredients

  • ½ cup shortening
  • 1 cup sugar
  • 1 egg
  • ½ cup cold coffee
  • ½ tsp. baking soda
  • 2 cups all-purpose flour
  • ½ tsp. salt
  • 2 tbsp. cinnamon
  • 1 cup peeled and finely chopped apples
  • 1 cup raisins
  • 1 cup pecan or walnut pieces
  • Paper muffin cups

Preparation

Preheat oven to 350 degrees.
Cream shortening and sugar until smooth. Add egg and mix well.
Stir baking soda into coffee & set aside.
Combine flour, salt & cinnamon. Add to cream cheese mixture- alternately with coffee- beginning and ending with flour mixture. Mix until smooth.

Add apples, raisins and nuts. Mix well.
Spoon into paper cups until 2/3rds full
Bake for 18 -20 minutes. Makes 1 ½ dozen.
